Go-To Homemade Bread Recipe

Adapted from the Master Recipe found in the cookbook Healthy Recipes from the Heart of Our Homes
by Phyllis and Shirley

Preheat oven to 375 degrees.

In Kitchen Aid with dough hook place:
2 1/2 cups warm water
1/4 cup oil
3/8 cup honey
1/2 Tbsp salt
1/2 Tbsp dough enhancer
5 cups of ground whole wheat (will add more later)
1 1/2 Tbsp SAF Instant yeast

Turn on mixer and knead on speed 2-3 ish.  Quickly add as much additional flour as needed to help dough pull away from side of bowl (about 1-2 cups).  Knead for 5-10 minutes (until gluten has developed) and add back 1-2 Tbsp of water if needed  during the kneading to keep dough SOFT (will be a little sticky).  Oil hands and counter well.  Divide dough between 2 loaf pans sprayed with nonstick spray.  Let rise for 30 minutes until they have doubled in size.  Turn oven down to 350 degrees.

Bake at 350 degrees for 30-35 minutes.  If you use a read thermometer, remove the loaf from the loaf pan, stick the thermometer in the bottom of the bread loaf, and if it reads 200 degrees, that is ideal.  Cool on rack.

Easily frozen when cooled.

Meal options:
Grilled cheese sandwiches and tomato soup.
Grilled cheese sandwiches with applesauce or fresh fruit or a side salad.
Toast a slice of bread and then broil it in the oven covered with sliced tomatoes, basil leaves, and mozzarella cheese and serve with fruit or side salad.
